The origins of Causa Rellena can be traced back to the pre-Columbian era, when the Incas cultivated and revered the humble potato. The word "causa" is derived from the Quechua word "kausaq," which means "giving life" or "nourishing." This name reflects the vital role that potatoes played in sustaining the Inca civilization.

After the Spanish conquest, the dish evolved with the introduction of new ingredients, such as olive oil, onions, and spices. The addition of fillings like chicken or tuna further transformed Causa Rellena into the delicacy we know today.

Over time, Causa Rellena became a symbol of Peruvian identity and a source of national pride. It is often served at family gatherings, celebrations, and as a beloved street food.

Causa Rellena Recipe:

Ingredients:

  • 1 lb (500g) yellow potatoes
  • 1/2 cup (120ml) olive oil
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 lb (500g) cooked chicken, shredded
  • 1/2 cup (120ml) mayonnaise
  • 2 tablespoons (30ml) lime juice
  • Salt and pepper to taste
  • Lettuce leaves for serving
  • Sliced hard-boiled eggs and black olives for garnish

Instructions:
  1. Boil the potatoes: Peel and cut the potatoes into chunks. Boil them in salted water until tender, about 15-20 minutes. Drain and mash them while still hot, adding a few tablespoons of olive oil to achieve a smooth consistency.
  2. Prepare the filling: In a skillet, heat the remaining olive oil over medium heat. Sauté the onion and garlic until translucent. Add the shredded chicken and cook for a few minutes, stirring occasionally. Remove from heat and let cool slightly.
  3. Make the filling mixture: In a bowl, combine the cooled chicken mixture with mayonnaise, lime juice, salt, and pepper. Mix well.
  4. Assemble the causas: On a flat surface, shape the mashed potatoes into round or oval patties, about 1/2 inch (1 cm) thick. Place a dollop of the chicken filling in the center of each patty, then carefully fold the potato over to enclose the filling, forming a half-moon shape.
  5. Garnish and serve: Arrange the stuffed causas on a platter lined with lettuce leaves. Garnish with sliced hard-boiled eggs and black olives. Serve chilled or at room temperature.

Causa Rellena is a true celebration of Peruvian culinary heritage, combining the humble potato with flavorful fillings and vibrant colors. Whether enjoyed as an appetizer or a light meal, this dish is sure to delight your taste buds and transport you to the heart of Peru's rich culinary traditions.
